Without a good grape, there is no need to hope to produce a good wine. The choice of the date of the harvest determines the quality.
Several criteria are important:

Some winegrowers took out their pruning shears on Wednesday, August 12, 2020, for crémants in particular, it is a historically early date (dates close to the record of 2003, due to the heat wave). This 2020 harvest will be one of the most advanced in the wine history of Burgundy !
Almost a month ahead of last year, this precocity of the vine is explained by the climatic conditions of spring and summer, a very hot and very cuttlefish year. Over the years, the harvest is earlier and earlier due to global warming!
According to one study, the average harvest start date is 22 days higher when there is a temperature rise of just over 2°C in spring and summer.
