After Beaune and Mâcon, the first stone was laid in Chablis. These three cities of Burgundy wines and climates must become the wine tourism gateways to the region. Winegrowers and elected officials met on Thursday 9 September to formalize the start of work on the chablis wine city. Armed with shovels and concrete mixers, the representatives of the vineyards of Northern Burgundy – Chablis, Tonnerrois, Auxerrois, Chatillon, Jovinien and Vézelien – have for the occasion designed a cement made of their own land.
In the heart of Chablis The project consists of an "elegant alliance of historical and contemporary heritage" according to the Burgundy interprofession. Indeed, the former cellar of the monks of Pontigny, in the center of Chablis, will host the wine tourism center. For the occasion, it will be extended by a modern annex. "It is the Burgundian architect, Claude Correia, from The Atelier Correia Architectes & Associés who will be at the helm of this place full of stories. It will propose a link of 800 m2 between the past and the future, by designing an extension in the extension of the historic monument of the petit Pontigny cellar. Its intimate garden of 600 m2, enclosed by walls, will also be redeveloped to invite to a wine tourism stop in the heart of the village of Chablis." Inside, there will be a place of reception and shop, but especially a museography. "To discover the history, heritage and wine culture of Chablisien, Grand Auxerrois and Chatillonnais, scenographer Adeline Rispal has imagined an immersive and sensory tour that will be based on the idea of strata." A reference to the complexity of the soils of the Chablis and its different terroirs. This site will be part of a network of three Burgundy wine cities , with Mâcon and Beaune, the parent company.
